I'm sure you're right that Gram Parsons was a major influence.  HOWEVER:
Here's what Patrick Humphries says in his bio of Richard Thompson:

"Another one-off project which held Thompson's attention for six gigs during the summer of 1981 was the GPs, a short-lived supergroup featuring himself, Ralph McTell, Dave Peggs and Dave Mattacks.
Dave Mattacks: 'The Pope had just got shot, and my name for the group was the Grazed Pontiffs.  The only thing on the book were a few dates in Ireland, during which we tried to keep the group name's origins quiet...'"
